Founded in 1868 by Edmund McIlhenny in Avery Island – Louisiana (U.S.A), TABASCO® sauce is the most well-known and best-selling pepper sauce in the world.
Even after 140 years, Tabasco® still uses its original recipe. It owes its unique flavor to the aging process it goes through: after it has been prepared, it is aged in white oak casks for up to three years until it is worthy of the Tabasco® name.
Tabasco® produces a range of recipes with different levels of spice. These levels are measured in Scoville units. The Scoville scale, created in 1912 by the chemist Wilbur Scoville, measures the quantity of capsaicin – the chemical substance that produces the sensation of heat. The higher the Scoville rating, the spicier the sauce.
